Homemade Custard Puffs & Recipe

Recently, my girl was complaining that she didn't want to bring Gardenia bread to school anymore.....

Haiz...nowadays teenagers are really fussy! To make my girl shut her mouth automatically, I decided to get her some cream puffs to school the next day. After all, she did mention that those are her favourites before.

Fortunately, a friend of mine is currently selling homemade cream puffs as her part-time job. And I got a big box from her. Upon receiving the cream puffs, I fell in love with them! They were kinda small (you can gobble one up with a mouth). Best eaten when they were just out of the refrigerator!

I got the recipe from allrecipes.com, you may try it out at home during the weekends, I bet the kids will love them!

Ingredients:-
1/2 cup white sugar
5 tablespoons all-purpose flour
1 pinch salt
2 cups milk
2 egg yolks, beaten
1 teaspoon vanilla extract
1/2 cup shortening
1 cup water
1 cup all-purpose flour
1 pinch salt
4 eggs

Method:-

1) For the custard: In a small saucepan, combine 1/2 cup sugar, 5 tablespoons flour and a pinch of salt. Stir in milk, a little at a time, until smooth. Bring to a boil over medium heat, stirring constantly. Boil 60 seconds, then pour a small amount of hot liquid into the 2 egg yolks, and stir. Then return now heated egg yolks to saucepan and stir, over heat, until mixture starts to bubble again. Remove from heat, add vanilla. Cover and chill in refrigerator.

2) Preheat oven to 450 degrees F (230 degrees C).

3) For the pastry: In a medium saucepan, combine shortening and water and bring to a boil. Sift together 1 cup flour and a pinch of salt and pour all at once into boiling mixture. Stir vigorously until mixture forms a ball. Remove from heat, and add eggs, one at a time, stirring vigorously after each addition. Drop by spoonfuls onto baking sheet, or pipe into desired shape.

4) Bake 10 minutes in the preheated oven, then reduce heat to 400 degrees F (200 degrees C) and bake 25 minutes more, or until golden. Cool completely, split, fill with custard, and replace tops.

tell your girl that I have the feeling too on bringing gardenia bread to skool. I had done that from my year 1 of secondary until finishede form 5. I am very tired with that too, luckily I have some saving and I used them to buy some lunch set from canteen and sit together with friend, else I will always be the out cast to eat gardenia alone.

ya.... I agree with you. Nowadays ah... the kid are so demanding. Sometime I have to create cut shapes sandwich and side dish for her. Arghh..... sometime is so tired some. ^-^

I always want to try making these puffs. How long do u take to make them? Your custard puffs look great! I had made some raisin and seed rolls for my family. You may give it a try.

They look so pretty. I made these once as part of the Daring Bakers' Challenge. I think I prefer custard filling.
As for teenagres, they're like that everywhere. I have one too.:)

actually, i didn't make them, i wrote that i got them from my friend who was selling puffs as her part-time job, for everyone's convenient, i search the web and got the recipe.

however, most people thought that i baked them...according to my friend, the making of those puffs are quite time consuming, you may call to order them if you are lazy to bake, that will be a brilliant choice!

hey,
thanks for the recipe but i have one question.
when i attempted it, my puff crust was too crispy and had a slightly bitter taste but it wasn't burnt. how can i make the really soft texture puff?

first of all, the batter of the puff should be thick and velvety smooth. Try adding more beaten
eggs a little at a time until you get the correct consistency. Make sure the eggs are fully
incorporated before adding more. Beat the batter well as this allows air to enter, which is what make's the puff shell fluffy and hollow. As for the bitter taste, it may be from the shortening. Try boiling the water first and add the shortening,instead of melting the shortening first. stir the mixture well, making sure that the fat is not floating on
the surface of the water.

i want to try your recipe.
but i just wanna to ask. for the pastry making, can we boil the water fisrt then put everything into it then let it cold put the eggs
